Moyin Moyin- Democratic Republic

After all the mac and cheese I’ve been posting, this is a welcome, healthy break! Does anyone else feel like they can’t eat very much or eat anything heavy when it’s really hot? I definitely do. On a 100 degree day (thanks global warming!), Moyin Moyin is light, refreshing, and filled with salmon! All the good things in life. And since eating salmon adds about 20 years to your life (DISCLAIMER: Allthoseinflavor assumes no responsibility for failed attempts at immortality through salmon. Please don’t haunt me), and it’s packed with so many other healthy things, this is the perfect summer dinner. Serve it on it’s own, or as a side dish at a BBQ!




½ cup cooked black eyed peas

1 bell pepper

½ onion

1 egg

1 cup water

1 salmon fillet

1 bouillon cube (I used vegetarian, but feel free to use chicken or beef)

2 tablespoons olive oil

Preheat oven to 350 F


Start by boiling the egg. Make more than one if you want. I think it’s a waste to only boil one at a time, so I made a bunch and then hoarded them. I’m very protective of my boiled eggs. You want it hard boiled, which coincidentally, is the only way I don’t like eggs. I’m a runny yolk person myself. It was still quite good, though! While that boils, cook the salmon. Whenever I cook fish, I like to sear it, then turn the heat to low, and then put a lid on it and let the stove do it’s thing.

In the meanwhile, slice up the bell pepper and onion.

Just roughly chop them,

then throw them into a food processor,

along with the oil and black eyed peas.

If you have a picky eater on your hands, this is a great way to get them to eat veggies- just pulse it up, and they won’t be any the wiser. I was surprised the first time I heard about picky eaters. I never really knew there was the choice of not eating my green beans. Once everything is all blended up,

pour it into a bowl.

Crumble up the bouillon cube, and then add that in. Usually, I don’t like to use anything premade or boxed in cooking, but I justify this as being dehydrated broth. Helps me sleep at night. I need my sleep! You ever tried to draw the Phillips effect on the aggregate demand curve from memory? You’d justify a lot of weird things, too.

Mix that in,

then grab the salmon, and slice it up. Or crumble it. Whatever helps YOU sleep at night. I’m not here to tell you how to live your life. Just how to make Moyin moyin.

Mix that in too,



and then spoon it all into two small baking pans or ramekins. Ramekins are preferable, but they were in the dishwasher and I was hungry. Don’t judge.

Cut the solitary egg in half, and put a half on each.

Put the pans/ramekins in a bigger, deeper dish, and fill it halfway with water. You don’t want the pans to float, but they should be partially submerged.

Bake them for about 55 minutes, and let them rest for around 10 before you serve them. These can be served hot or cold!
